1 tsp. oil
2 onions, finely chopped
1 green chilli, crushed, with salt
4 potatoes, boiled, peeled and cubed
2 cups kidney beans, boiled
Salt, pepper and lemon juice, to taste
Fresh coriander or parsley, to garnish
• Heat the oil in a pan over medium heat
for a few seconds. Add the onions and green chillies. Fry over
medium-high heat for about 2 minutes or until the onions are
transparent.
• Add the potatoes, kidney beans, salt, pepper and lemon
juice. Keep on low heat for about 3 minutes.
• Garnish with finely chopped fresh coriander.
